Ch-ch-ch-changes

Well these past 3 weeks have seen quite a change in our lives. No more school, no more play dates, more more random trips to Target and HomeGoods just to kill time, no more just because McDonalds drive through for kiddo.

I’ve become teacher, full-time playmate, athletic director, and executive chef (even more so) for my kid and add on housekeeper and office-mate since Z is home 24/7 as well!

I can’t say I hate teaching Teddy. We have a rough schedule that we keep to with an hour for lessons in the morning between 9-10, 2 hours of free play outside, then a mini lesson (usually a game), then another mini lesson before dinner (usually ABCMouse). Some days are better than others. Some days are awesome. Some days are really not great (that would be yesterday and the day before - they were really really hard).

Teddy and I have been on his letter recognition and writing and we’ve been doing some fun letter projects as we’ve been going along. We did the incredible bouncing egg for “E”, Teddy made treasure maps with “X” marks the spot for “X”, and we are going to do 2 different volcanoes for “V”

Last week, we worked on the the letter “I” … and our project was ICE CREAM.

Much to Teddy’s surprise it was making ice cream.

We made double chocolate, coconut milk ice cream, and then had banana splits. It was simple, fun, and NOT messy.

Until we ate the banana splits that is :-)

INGREDIENTS

  • 3 C (about 1.5 cans) full fat (don’t cheat here!) canned coconut milk

  • 3/4 C coco powder

  • 1/2 - 2/3 C honey

  • 1 C Chocolate chips

  • 2 Tbsp vanilla

  • 1 banana, Dairy free redi whip, peanuts, sprinkles, cherries, and chocolate sauce!

  1. Combine ingredients including chocolate chips into a blender and blend until thoroughly incorporated and smooth.

  2. The chocolate chips give the ice cream an extra layer of fudgey flavor, but it may not be a super smooth ice cream, there may be small pieces of chip throughout. If you prefer a smooth or less rich ice cream, leave the chips out of the recipe.

  3. IF USING AN ICE CREAM MACHINE: Chill mixture in the fridge for 1-2 hours and then slowly pour mixture into pre-frozen ice cream machine bowl and let the mixture churn until it reaches desired ice cream consistency (15-25 minutes).

  4. IF NOT USING AN ICE CREAM MACHINE:; Pour mixture into a freezer safe storage bowl (tupperware is a-ok) and freeze for 5-6 hours or until your desired consistency is reached.

  5. Eat out of the container! Make a sundae! Lick the bowl!

    Make and ICE CREAM SPLIT!!! Enjoy life. We all deserve a little more of that right now
