Sweet and Sour Chicken and Veggies

Well that summery weather was fun while it lasted, now back to cool, windy, springy days!  Any weather under 75 makes me crave a warm meal and apparently lately that has meant Asian food.  

One night I was craving, and I mean craving Chinese food.  Not the kind that leaves you thirsty and puffy in the morning, I just wanted something good.  So on to the interwebs I went and found some simple ideas for sweet and sour chicken.  

Jackpot!

Well let me tell you, this was one of the best ideas I have had in weeks.  The sweetness of the pineapple and the tang from the ketchup and vinegar (I swear! you don't taste ketchup!) it's just perfect.

This recipe is so simple, and so darn good!  Even Teddy ate it up (always a sure sign that I will be making a meal again).

Oh and did I mention it took me under 30 minutes to make start to finish?  It is definitely hitting the rotation list hard.

COOK TIME/SERVINGS

30 Minutes including prep / 4-6 depending on serving sizes

CALORIES PER SERVING

230 Calories/serving + rice or quinoa
(based off of 5 servings per meal)


INGREDIENTS

  • 1 lb (ish) or 2-3 chicken breasts 1 inch chunks
  • 1 can pineapple chunks or rings (drain and reserve juice)
  • 2 bell peppers (red and green) cut into 1 inch chunks
  • 1/2 white onion cut into 1 inch chunks

Sauce:

  • 1/4 - 1/2 pineapple juice from can (start with 1/4 and add more if you need to)
  • 1/3 C ketchup
  • 3 Tbps white or rice vinegar
  • 1.5 Tbsp soy sauce
  • 2-3 Tbps brown sugar (start with 2 an add more if you need to)
  • 1 Tbps tomato paste
  • 1 clove garlic
  • red pepper flakes to taste

DIRECTIONS

  1. sauté chicken with canola oil or EVOO over medium high heat in large pan until browned on all sides.

  2. Remove chicken and let drain in a bowl or colander lined with paper towels

  3. Turn heat to medium and sauté veggies for 3-5 minutes until slightly browned but still a bit crisp.

  4. Add in pineapple and sauté for a few minutes more.

  5. Add in chicken and sauce stir and let simmer uncovered for 5-10 minutes.  

  6. Serve over rice-quinoa mix and enjoy your healthy, happy, easy meal!
