The chaos is real over here my friends, it is very real.  Teddy and I have been felled by the stomach bug 2.0 and it is not pretty.  He's been down since Tuesday and I've been down since Thursday.  Zach leaves for a work trip early next week.  Things aren't looking good for our family.   

Teddy and I have slept more in the past few days than we have in weeks.  We have also eaten less, subsiding on grapes, crackers, and Advocare Rehydrate.  

The flu and stomach bug is going around town so you have been warned.  But hey, at least now you have a recipe for good soup incase your family gets sick :-)

Soup-er dinner!

Yesterday it got chilly outside and I started to feel a little better (food sounded like a decent idea) and I decided to make that gold standard of soups, chicken vegetable and noodle soup.  In our house chicken noodle soup is not something you eat only when you are sick but it is also a quick dinner for any night that you want a light meal.  I use rotisserie chicken, so all you have to do is cut the veggies :-)  

Even better, this soup goes great with grilled cheese, which makes any dinner so much better! We can't eat cheese over here but enjoy it for us!

INGREDIENTS:

  • 1 rotisserie chicken, meat pulled from bone and into chunks
  • 8 C vegetable or chicken broth - whatever you have on hand
  • 3 celery stalks - medium diced
  • 1 cup (or slightly more) carrots - medium diced
  • 1/2 onion - medium diced
  • 1 Tbsp mince garlic
  • 2 bay leaves
  • 2 Tbsp or so olive oil or butter
  • Dried oregano and rosemary, white pepper and fresh ground pepper to taste

DIRECTIONS:

  1. Over medium heat melt the butter or warm the oil.
  2. Add in the carrots-onions-celery mixture.  Stir mixture and add in oregano, white pepper, garlic, and rosemary.
  3. Cook until soft and fragrant and lightly caramelized.  
  4. Add in meat from rotisserie chicken, stir mixture, and add in black pepper if desired.
  5. Add in broth and bay leaves, give a couple stirs, and cover.  
  6. Allow to come to a boil and then turn down to a slow simmer for 15 minutes or more until you are ready to eat.  The longer the better.  
  7. Serve over rice or pasta.

Enjoy this dinner, but I hope you aren't making it because you are sick!

PS - I'm not sharing a meals list this week because I'm not 100% certain we'll be eating solids yet.  Fun stuff.
