Broccoli Slaw Stir Fry

So this dinner is one of Zach's favorites.  If he could have it on the menu multiple times a week he would.  And honestly, it is so easy to make I probably wouldn't object except for the fact that there are so many things that I like to cook and eat!  

When I say this meal is an easy meal to make I am not making light of anything.  When I made it last week I started at 7:05 and we were putting it into our bowls at 7:30.  That is under 30 minutes for a fresh, hot, home cooked dinner.  Pretty rockstar if you ask me.

The peanut and coconut blend together for a smooth  flavor which is offset nicely by the soy and lime combination.  On top of a just crisp broccoli slaw and chicken that has been sautéed with ginger and garlic, you have a decadent yet healthy dish to enjoy!

SERVINGS:
3 generous servings, 4 smaller/mid-sized servings

INGREDIENTS

  • 2 chicken breasts, cut into small chunks
  • 2 Tbsp extra virgin coconut oil
  • 1 Tbsp minced garlic
  • 1 Tbsp minced ginger
  • 1 can coconut milk or coconut creme 
  • 1-2 Tbsp Lime juice 
  • 1  package of packaged broccoli slaw from Trader Joes 
  • 2-3 Tbsp light soy sauce 
  • 2-3 Tbsp rice vinegar 
  • 2 Tbsp natural peanut butter (you can use PB2 or other powdered peanut butter, the dish just will not become as creamy)
  • Rice or quinoa
  • Siracha

DIRECTIONS

1.  Sauté chicken with garlic and ginger in pan over over medium-high heat.  Usually 3-4 minutes or until lightly browned.

2.  Lower heat to medium and pour coconut milk over the chicken and cook about a minute while stirring, making sure not to boil or burn coconut milk.  (because I cook on electric and it doesn't cool quickly I remove my pan from the heat for this step) 

3.  Add soy sauce, and vinegar then and lime juice to taste  (return to heat if you removed in above step). Cook until chicken is completely cooked through.

4.  Add the package of broccoli slaw.  Cook, stirring frequently.

5.  Test sauce and add soy, vinegar or lime as needed.

6.  Add the peanut butter, and stir (I add this at the end so I don’t over do it and because it thickens the dish – add it in little by little so it is suited to your level of peanut taste).

7.  Cook until slaw is soft but still firm.

8.  Serve over rice or quinoa

9.  Add some Sriracha, because you can, and Sriracha makes everything fantabulous!
