Egg Roll in a Bowl

15 minutes y'all.  15 freaking minutes.  I made a healthy dinner, using only one pan and that we all devoured, in only 15 minutes.  Do you have 15 minutes to make dinner?   Read on my friends!

So who doesn't appreciate a good Chinese egg roll, the cabbage and carrots and meat, and the asian spices and sauces, all fried together.  Well these days I'm not so into the fried and greasy food, but still crave the flavor combination.  Enter the Egg Roll in a Bowl, all the ingredients, stir fried and served over rice.

You have the savory meat, the sweet cabbage and carrots, and the rich and salty flavors of the Asian sauces all with none of the guilt!  Make this meal gluten free, paleo, or vegetarian, it caters to all diets and is just as good.

Now go ahead and make your own 15 minute winner of a meal!

INGREDIENTS

  • 1 1/2 bag Trader Joes shredded cabbage

  • 1 bag Trader Joes shredded carrot

  • ** if you don’t have access to a TJ, you can shred a head of cabbage and carrots in a cuisinart OR grab a bag or each preshredded for coleslaw **

  • 1 1/2 Tbsp sesame oil

  • 1 tsp ginger paste or cube of frozen ginger

  • 4 cloves garlic - minced or fresh

  • Chili oil

  • 1/3 cup vegetable broth

  • 3 Tbsp soy sauce - NOTE: I used 3 Tbsp soy sauce and 1 Tbsp sweet soy sauce

  • touch of sugar - if you do not have sweet soy sauce you will want to add just a touch of sugar to meld with the garlic and salts

  • chili oil to taste

  • 1 - 1 1/2 lb ground chick or Turkey

  • 1c dry jasmine/basmati rice

  1. Begin cooking rice - it takes just as long as the meal.

  2. Place meat in large pan and cook until browned.

  3. Remove and let drain in strainer.

  4. On medium high heat, with some olive oil, cook cabbage and carrots until softened.

  5. While cooking mix spices, sugar, soy sauce, and broth.

  6. Reduce heat to medium.

  7. Add meat back in.

  8. Add both/spice mix to the pan and stir well.

  9. Continue cooking and stirring frequently until the cabbage slightly wilts.

  10. Add in chili oil if using

  11. Adjust flavorings as desired - we added more sesame and soy sauce.

  12. Add rice to pan and mix until completely incorporated.
