Crock Pot Barbecue Chicken

A couple weeks ago my friend D came over so we could hang out and sunbathe by the pool ... hahaha ... so our kids could play and drench us with water from the baby pool while zooming trucks around the deck.  

Between our conversations of potty training, and how much we are looking forward to Cars 3, she was lamenting having to figure out dinners for the week.  I already had dinner for the night going in the crock pot - barbecue chicken with overnight cole slaw.  

I couldn't let the rest of her morning revolve around figuring out dinner, so I shared this family favorite recipe that is on our dinner rotation at least once every other week or so. It's just that good!

There is nothing easier than a meal that involves 4 ingredients for the main dish.  It's even better when those 4 ingredients fill your house with a sweet, mouth watering smell all day long.

We serve this chicken over cole slaw (the same as in the Carolina Pulled Pork recipe) and with baked potatoes or (this is new) Trader Joes baked french fries!  The leftovers are fantastic the next day on a salad, or if you ask Teddy, with your hands while watching Curious George.

Now grab that crock pot and enjoy dinner!

Note: I made this at the beach for 10 people.  I used 8 large fresh chicken breasts - I think it came out to 4lbs of meat - and 3/4 large bottle of sauce this was plenty of food (granted there were 2 men that had 2.5 maybe 3 servings).  If using fresh not frozen chicken the cook time is shorter, but the timing is going to depend on the power of your crock pot.  


SERVINGS/COOK TIME

4-6 Servings depending / Prep time: 5 Minutes; Cook time: 4-6 Hours High, 8 hours low


INGREDIENTS

  • 4 frozen chicken breasts (1 1/2 Chicken breasts per person)
  • 1/2 bottle of your favorite BBQ sauce
  • 1/4 C brown sugar
  • 1 Tbsp brown mustard

DIRECTIONS

  1. Place chicken in crock pot
  2. Mix remaining ingredients and pour over chicken 
  3. Turn on crock pot for either high 4-6 hours or low 8-10 hours.
  4. Stir a couple hours in to mix up the sauce and chicken
  5. 15 -30 minutes before serving shred chicken with two forks and stir in with the barbecue sauce.
  6. Serve with cole slaw and baked potatoes.
