Menu 2/4/2017
/When I started thinking about this blog I really wanted to focus on topics of interest to families. I am very excited to share our meals and my hope is to share with you one new recipe a week.
Zach and I meal plan, usually on Saturdays, and he does the grocery shopping with Teddy. We have our meals mapped out ahead of time and it makes the week so much easier. Most weeks I will share with you our selection of meals for the week. You'll see we have a lot of repeats. Those are what we call "family favorites" - meals that the three of us all like and will eat regularly. We all have our favorites and unabashedly ask for them on constant rotation. Mine is burger and fries and Mediterranean Chicken Bake, Zach's is Thai Peanut Broccoli Slaw Stir Fry, Teddy's is salmon cooked any which way and grilled veggies.
Meals this week:
- Carolina Pulled Pork Barbecue with Chic-Fil-A style slaw
- Mediterranean Chicken Bake
- Chicken Tagine with Olives, Golden Raisins, and Preserved Lemons *Recipe of the Week!*
- Chili
- Barbecue Marinaded Salmon with grilled veggies and baked potatoes
- Thai Peanut Broccoli Slaw Stir Fry
The Super Bowl is this Sunday, and while none of our teams (the Packers or the Redskins) are playing we will still watch, and eat. I'll make the pulled pork on Sunday and that should go really well with the fried pickles and brownies we have planned. Yum!
I am making Chicken Tagine with Olives, Golden Raisins, and Preserved Lemons on Saturday because it is supposed to be cold and the Moroccan spices in this recipe really warm you up. The rest of the week is up for grabs, I usually do not plan what night we will make each meal during the week because so much can come up and change. This week's menu is heavy on the crock pot, so everything is really easy to put together and very interchangeable.
We try to make some meals that Teddy will eat, knowing that not all of them will be hits. When he doesn't eat what we are eating he will get PB&J, hot dogs, or other kid favorites, always with a side of blueberries. He loves salmon, chili, and the chicken bake, as well as the pork barbecue so this week is going to be good for him!
