Menu 2/11/2017
/Meals this week:
- Chili *Recipe of the Week!*
- Pulled barbecue chicken with cole slaw and baked potato
- Grilled burgers, french fries, and grilled vegetables
- Grilled salmon and veggies with baked potatoes
- Coconut curry chicken
- Thai peanut broccoli slaw stir fry (holdover from last week - we ordered in)
You will notice that there are a few repeats from last week. We try to rotate meals frequently but there are a number of meals that are (1) really good and (2) Zach's cooking specialties. Who am I to deny my husband a chance to grill? Also there are those days when the chef goes on strike and we order in. That's why you see the Thai peanut broccoli slaw stir fry on here again, we ordered in that night instead. Sometimes dinner takes better when you know there are no dishes to do!
This week I will be sharing my chili recipe. Many people have a go to chili recipe, but a lot of them taste the same (cue meat with a tomato base). My chili is rich and fragrant with a smooth cocoa base that balances the acidity of the tomatoes really well. Check it out here and enjoy!
On a different topic, I've been getting some questions about our grocery shopping. Who, what, where... Well. Zach does all of the main grocery shopping, he is a grocery store champion. Teddy and I go mid-week for a refill but Zach handles the main trips. We get 97% of our groceries at Trader Joe's. They have everything you need in a neat and tidy, friendly, and inexpensive little store. On the rare occasion when we can't find something at Trader Joe's we go to a traditional grocery store, but that is the exception. Nearly all of the ingredients I need for my recipes are available Trader Joe's without issue. Also, our bill is a bit higher than some but i would say 2/3 of the cart is produce or perishable items. Berries, veggies, and fruit are our go to snacks, as well as anything we can make smoothies out of. Because we cook so much at home we get a lot of groceries in general but it is worth it.
I hope you enjoy this week's recipe and it inspires you to make one more meal at home! Click through for the recipe and enjoy!
